Which Wine is better for your Dinner?

Which wine to serve?

Chardonnay
This popular dry white wine is more full bodied than other white wines. Chardonnay has aromas of fruits and acidity. The aroma typically has flavors of lemon or grapefruit.
Goes well with chicken, seafood and fish.
Gewurztraminer 
Gewurztraminer has a spicy aroma and fruity flavors of peach, apricot, tropical fruits, and lychee. It can be a dry or sweet white wine. 
This type of wine goes especially well with spicy Asian dishes and pork sausages. 
Pinot Grigio 
Pinot Grigio is light and crispy with almond, lemon, and vanilla flavors. These wines are also called Pinot Gris. 
This wine goes well with seafood and salmon. 
Riesling Rieslings have a floral aroma. They range from very dry and crisp to intensely sweet depending on where it is from. German Riesling is slightly sweet and balanced with some acidity. California Riesling tends to be sweeter. This type of wine goes well with chicken, fish, pork, and spicy foods.    
Sauvignon Blanc 
Lighter than Chardonnay, Sauvignon Blanc usually has a grassy citrus aroma. Flavors range from apple, pear, green tea, limes and freshly mowed grass. You can often detect a little smokiness. California Sauvignon Blanc sometimes has a melon flavor. This is a crisp light wine with a strong acid finish.
Sauvignon Blanc pairs well with salads, poultry, seafood, and cheese. 
Cabernet Sauvignon
Cabernet Sauvignon is a rich full-bodied red wine. Aged in oak, this is a complex wine with cassis and blackberry flavors as well as hints of bell pepper.
Cabernet Sauvignon is the classic wine to serve with red meats. 
Merlot
Merlot is softer tasting than Cabernet Sauvignon due to having less tannins. 
It is a smooth, dry red wine. Merlot is often described as having the flavors of boysenberry, black cherry, herbs, and mocha.
Merlot is best with poultry and grilled meats, but these types of wines actually goes well with most foods.
Pinot Noir
Pinot Noir is a smooth silky red wine that is extremely fruity. It is characterized with aromas and flavors of black cherry or rose petals along with hints of spiciness or herbal qualities. Pinot Noir is best served with grilled salmon, roast beef, lamb, duck, and mushrooms.
Zinfandel
Zinfandel can be light to full bodied. It can be rich and spicy or lighter and fruitier.  
Zinfandel tastes great with steaks, grilled meats, and tomato based dishes.

Chardonnay

Este vino blanco popular tiene mayor cuerpo que cualquier otro vino blanco. El Chardonnay contiene aromas de frutas y una alta acidez. El aroma es típicamente a limón y uvas.
Maridaje: Pollo, mariscos y pescado.
Gewurztraminer
Gewurztraminer contiene un aroma picante y sabores frutales a durazno y otras frutas tropicales. Puede ser un vino blanco seco o dulce.
Maridaje: Comida asiática y Puerco.
Pinot Grigio
Es ligero y tostado con sabores a limón, almendra y vainilla.
Maridaje: Mariscos y Salmón.
Riesling 
Este vino tiene aromas florales. Existen desde secos y crujientes hasta intensamente dulces dependiendo su origen. El Riesling Alemán es un poco dulce y balanceado en acidez en cambio el de California es mas dulce.
Maridaje: Pollo, pescado, puerco y comida muy condimentada.
Sauvignon Blanc 
Mas ligero que el Chardonnay, el Sauvignon Blanc usualmente contiene un aroma cítrico y a hierbas. Los sabores varían entre manzana, pera, te verde, lima y hierbas frescas. En ocasiones contiene sabor a melón.
Maridaje: Comida Salada, mariscos, quesos y aves.
Cabernet Sauvignon
El Cabernet Sauvignon es un vino tinto lleno de cuerpo. Es un vino complejo con sabores a cassis y mora, así como toques de pimientos.
Maridaje: Carnes Rojas.
Merlot
Contiene un sabor mas suave que el Cabernet Sauvignon, debido a su mínimo contenido de taninos. Es un vino tinto suave y seco.
Maridaje: Aves y carnes a la parrilla.
Pinot Noir
Pinot Noir es un vino tinto suave que es extremadamente fructuoso. Es caracterizado con aromas y sabores a cereza o pétalos de rosa con toques a especias o herbaticas.
Maridaje: Salmón a la parrilla, roast beef, pato y cordero.
Zinfandel
Zinfandel puede ser ligero o pesado en cuerpo. Puede ser rico y picante o ligero y fructuoso.
Maridaje: Carnes a la parrilla y platillos a base de tomate.

Diferent kinds of Salt

Not all salts are the same. The most important kinds are table salts, with or without iodine cupplements. Then you have sea salt and coarse salt. Sea salt comes from the salt mines in Guarande (Brittany, France). The size and shape of the crystals and their flavor can vary slightly. The light gray "Fleur de Sel" (salt flower) apparently only forms if the wind blows from the East. Coarse salt is often used for soups and vegetable dishes. Smaller salt granules season fish, meat and sauces. Salt should always be stored dry, and not in metal containers.

Diferentes tipos de Sal

Existen diferentes tipos de Sal y no todas son iguales. Las mas importantes son la sal de mesa, con o sin yodo. Después esta la sal de mar y la sal gruesa. La sal de mar proviene de las minas en Guarande (Brittany, Francia). El tamaño y la forma de cada cristal así como su sabor puede variar. Existe también la "Fleur de Sel" (Sal de flor) que aparentemente solo se forma si el viento sopla del Este. La sal gruesa se utiliza constantemente para sopas y vegetales. Granos mas pequeños son para sazona pescado, carne y salsas. La sal debe siempre mantenerse seca y no se debe utilizar contenedores de metal.

Culture: India

Basil
Even though we think it is from the Mediterranean, the Basil is actually from India. Thanks to the greeks and later to the romans, the basil was introduced to Europe and was used in the kitchen because of it's aromatic features. 
This plant is used in all present gourmet kitchens, with the sweet taste and strong aromatic fragrance. In summer, it's fragrance is even stronger, because of the intensity of the sun, and the leaves that have a higher aroma are those which are picked up just before the flower come out, such as the older ones that are more spicy.

Albahaca
Aun cuando se piensa que esta planta es del Mediterraneo, la albahaca es originaria de la India. Su introducción a Europa es gracias a los griegos y después los romanos, quienes la utilizaban en la cocina por  su característica aroma. 
Esta planta es utilizada en todas las cocinas gourmet actualmente, para dar un sabor dulce pero con una fragancia fuerte a todos los platillos en los que se utiliza. Su fragancia es mas fuerte en verano, debido a la intensidad del sol y las hojas que tienen mayor fragancia son aquellas que se escogen antes de la floración, así como las hojas viejas contienen un sabor mas picante.

Coconut
The coconut palm is grown throughout the tropics for decoration, as well as for its many culinary and non-culinary uses; virtually every part of the coconut palm can be utilized by humans in some manner. Coconut fruit in the wild is light, buoyant and highly water resistant, and evolved to disperse significant distances via marine currents. Most authorities claim it is native to South Asia (particularly the Ganges Delta), while others claim its origin is in northwestern South America. 

Culinary uses of the various parts of the coconut include:
  • The nut provides oil for cooking and making margarine.
  • The white, fleshy part of the seed, the coconut meat, is edible and used fresh or dried in cooking.
  • The fleshy part can be desiccated to produce coconut milk in making curry dish and other dishes using coconut milk.

Coco
El coco es una fruta comestible, obtenida del cocotero, la palmera más cultivada a nivel mundial. Tiene una cáscara exterior gruesa y fibrosa (mesocarpio) y otra interior dura, vellosa y marrón (endocarpio) que tiene adherida la pulpa (endospermo), que es blanca y aromática. El lugar de origen del cocotero es un tema discutido, mientras muchos consideran que proviene de Asia del Sur, concretamente de la delta del Ganges, algunos dicen que proviene del noroeste de América del Sur.

Uso Culinario:
  • La nuez provee aceite para cocinar y hacer margarina.
  • La parte blanca de la semilla, la carne del coco, se usa fresca o seca para platillos.
  • La parte carnuda puede ser disecada para producir leche de coco para diferentes platillos.
Uso Medicinal: por su potencial acción antiséptica y diurética, etc., en muchos países tropicales se emplea como remedio popular contra el asma, la bronquitis, contusiones, quemaduras, estreñimiento, disentería, tos, fiebre, gripe, etc.

Coffee is one of the world's most popular beverages. It is primarily enjoyed for its taste and aroma, but also for its well-known positive effect on mental performance. Drinking coffee has been demonstrated to improve an individual's alertness and concentration so aiding better performance and also helping reduce the feeling tiredness or lethargy.
The key ingredient demonstrated to be responsible for enhanced mental performance is caffeine, which is naturally contained in coffee but also in tea and cocoa.

Millions of people around the world look forward to a cup of coffee whether at home, whilst on the move or at work. The aroma, taste and the sense of feeling “refreshed” after a cup of coffee brings pleasure to many of us, as we go about our daily lives.
Coffee is one of the most widely researched ingredients and the growing body of scientific research shows that coffee, when drunk in moderation (four to five regular size cups a day) is safe for healthy adults and can even have beneficial health implications as part of a healthy diet and physically active lifestyle.

Vamos a tomar un cafe!

El cafe es una de las bebidas mas populares. Es disfrutado primordialmente por su sabor y aroma, pero tambien por sus efectos positivos en el desempeño mental. Se ha demostrado que tomar cafe mejora la concentration de un individuo y por lo tanto reduce los sintomas de el cansancio. El ingrediente principal responsable de el desempeño mental es la cafeína, la cual se encuentra naturalmente en el cafe, pero tambien en el te y la cocoa. 
Millones de personas alrededor del mundo siempre gustan el tomar una taza de cafe ya sea en casa, para llevar o en el trabajo. El aroma, sabor y la sensación de sentirse "fresco" después de una taza de cafe, produce un placer para muchos de nosotros.
El cafe es uno de los ingredientes mas investigados por lo que el crecimiento del cuerpo científico demostró que, cuando se toma cafe en moderación (4-5 tazas regulares al día) es seguro para adultos saludables e incluso puede tener beneficios como parte de una dieta sana y vida físicamente activa.

Olive Oil
Is han oil obtained from the olive, a traditional tree crop of the Mediterranean Basin. It is commonly used in cookingcosmeticspharmaceuticals, and soaps and as a fuel for traditional oil lamps. Olive oil is used throughout the world, but especially in the Mediterranean countries such as SpainItaly,GreeceFrancePortugalTurkeySyriaTunisia and Morocco. Over 750 million olive trees are cultivated worldwide, 95% of which are in the Mediterranean region. Spain supplies 1/3 of the world’s olive oil, Italy 1/4, and Greece 1/5.
Extra virgin olive oil is mostly used as a salad dressing and as an ingredient in salad dressings. It is also used with foods to be eaten cold. If uncompromised by heat, the flavor is stronger. It also can be used for sautéing.
When extra virgin olive oil is heated above 350 °F (177 °C), the unrefined particles within the oil are burned, this leads to deteriorated taste.

Aceite de Oliva
Es un aceite vegetal de uso principalmente culinario que se extrae del fruto recién recolectado del olivo denominada oliva o aceituna. Su uso es fundamentalmente culinario, pero se ha empleado con propósitos cosméticos, así como cotidianos en las lámparas de aceite. Tan sólo un 2% de la producción mundial se realiza fuera del área del mediterráneo y España, Italia y Grecia acaparan las tres cuartas partes de la producción mundial. El empleo como ingrediente culinario es mayoritario en aliños de diferente ensaladas. Es en crudo como conserva todas sus propiedades organolépticas intactas, pues con el calentamiento pierde algunas de ellas. Cuando el aceite de oliva extra virgen es calentado por arriba de 350 °F (177 °C) las partículas refinadas en el aceite son quemadas, lo que ocasiona perdida de su sabor.

Culture: Mexico



Poblano Pepper (Chile)
The poblano is a mild chile pepper originating in the State of Puebla, Mexico. Dried it is called an ancho chile. While poblanos tend to have a mild flavor, occasionally and unpredictably a poblano can have significant heat. Different peppers from the same plant have been reported to vary substantially in heat intensity. It is one of the most popular peppers grown in Mexico. Poblanos are also popular in the United States and can be found in grocery stores in the states bordering Mexico and in urban areas.

Chile Poblano
Chile originario del estado de Puebla, Mexico. El chile poblano seco es conocido como chile ancho. Aunque este chile en promedio no contiene alto contenido de capsaicina (componente activo de los pimientos picantes),  es impredecible y puede ser muy picante.  Es uno de los chiles mas populares en Mexico, aunque tambien en Estados Unidos y lo puedes encontrar en las fronteras y areas urbanas.
