Today's Recipe: Chicken Ratatouille

Chicken Ratatouille

Ingredients:
1 tbsp Vegetable Oil
12oz Boneless, skinless chicken breast (cut into strips)
2 Zucchini (unpeeled and thinly sliced)
1 Small Eggplant (peeled, cut into small cubes)
1 Medium Onion (thinly sliced)
1 Medium Green bell Pepper (rinsed, cut into small pieces)
1/2 lb Fresh Mushrooms (rinsed and sliced)
1 can Whole Peeled Tomatoes (chopped)
1/2 tbsp Garlic (minced)
1 1/2 tbsp Dried Basil (crushed)
1 tbsp Fresh Parsley (rinsed, dried and minced)
1/8 tbsp Ground Black Pepper
1/2 tbsp Salt

Directions:
Heat oil in a large nonstick pan. Add the chicken, and saute for about 3 minutes or until lightly browned.
Add the zucchini, eggplant, onion, green pepper and mushrooms. Cook for about 15 minutes, stirring occasionally.
Add the tomatoes, garlic, basil, parsley, black pepper and salt. Stir and continue to cook for about 5 minutes. Serve warm. A recipe that it's very easy to prepare and eat!

Ingredientes:
1c Aceite vegetal
350gr. Pechugas de Pollo deshuesadas (cortadas en fajitas)
2 Calabazas (sin pelar y rodajas finas)
1 Berenjena chica (pelada, cortada en cubos chicos)
1 Cebolla mediana (rodajas finas)
1 Pimiento verde (Picado)
250 gr. Champiñones frescos (rodajas finas)
1 lata (400gr) Tomates sin Piel (picados)
1/2 c. Ajo (picado)
1 1/2 c. Albahaca Seca (molida)
1 c. Perejil Fresco (picado)
1/8 c. Pimienta Negra (recién molida)
1/2 c. Sal

Direcciones:
Calienta el aceite vegetal en un sartén grande. Agrega el pollo y saltea por unos 3 minutos o hasta que dore un poco.
Agrega la calabaza, la berenjena, cebolla, pimiento verde y los champiñones. Cocina por unos 15 minutos, revolviendo ocasionalmente.
Agrega los tomates, el ajo, albahaca, perejil, pimienta y sal. Revuelve y continua cocinando por 5 minutos mas. Sirve caliente. Una receta facil de preparar y probar!
